What Massaman actually is Massaman is one of Thailand's gentler curries, and it tells a story about trade. Alongside the usual Thai aromatics it carries warm spices you would not expect in a Thai kitchen, things like cinnamon, cardamom, and clove, brought in centuries ago through Muslim trade routes. That is why it reads as warm and rounded rather than sharp and hot. It is a curry built for comfort, not for a burn. Why a lamb shank Most places serve Massaman with chicken or beef, and both are fine. I use a colossal Australian lamb shank instead because the dish rewards a cut that can stand up to long cooking. Lamb has enough fat and connective tissue to turn silky over hours in the pot, and its richness meets the sweetness of the curry instead of getting lost in it. It is a bigger commitment on our end, and it is what makes the plate feel like an occasion. The seven-hour braise The shank goes into the curry and stays there, low and slow, for about seven hours.
